I had nothing on my agenda today except for enjoying the fresh 60-degree air (all windows were open for several hours). So I decided to get all fancy with rice. I made a boneless pork chop my traditional way (soaked in low-sodium soy sauce and cooked in a small frying pan), and added it over the basmati rice, alongside fresh mushrooms, re-hydrated seaweed and 2 hard boiled eggs. It's always SO good...
